Try one-pot dining

Have you been sticking to takeout in order to avoid the dishes you get dirty when cooking at home? Try these one-pot comfort meals this winter for maximum taste with minimum mess. For today’s post, the Panoramic Properties’ blog team has put together a list of one-pot dining recipes for our Niagara Falls residents to enjoy.

 

Chicken Tortilla Lasagne

 

For the great taste of lasagne in a jiffy, use soft tortillas instead of pasta sheets.

 

Ingredients:

 

  • 1 teaspoon olive oil
  • 500 grams ground chicken or turkey
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 227 gram package sliced button mushrooms, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 398 mL can tomato sauce
  • 2 teaspoons brown sugar
  • 3 10-inch flour tortillas
  • 1/2 142 grams clamshell baby spinach, about 4 cups
  • 2 cups shredded mozzarella-cheddar cheese mix

Creamy Ham and Pea Fusilli

 

Follow this one-pot recipe for easy comfort food in about 25 minutes.

 

Ingredients:

 

  • 454 grams fusilli
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 1 small onion, finely diced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 bay leaf
  • 1 1/2 cups diced ham steak, about 175 g
  • 1/2 teaspoon each salt and pepper
  • 1/2 cup finely chopped parsley
  • 2 tablespoon juice from a lemon

Baked Tomato Risotto

 

Making risotto is a labour of love, but this easy recipe takes the work out of it.

 

Ingredients:

 

  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1 cup arborio or long-grain rice
  • 19 ounce can stewed tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon dried oregano leaves
  • 1 teaspoon each garlic powder, salt and granulated sugar
  • 140 grams log goat cheese, crumbled
  • 1 package baby spinach, about 8 cups
